We went here for lunch yesterday at around 11:30 and even though my entire party wasn't with me at that point, they went ahead and seated me since they weren't entirely busy. I had the grilled salmon with brocolli and mashed potatoes. Wow, that salmon was the best I have ever had! Perfect on the outside and inside. Someone at our table got the garbage salad and although it has a rather strange name the salad was delicious. The bread that was served with the meal was extremely good and I very much recommend trying the raisin bread. The waitstaff was very pleasent to talk to and checked on us frequently. We sat outside and that was a great place to people watch. We asked what famous people had been in the resteraunt recently and we were told that Brooke Shields, R Kelly, and some sports star had been in a few days before and then went on to show us where they sat! The waitress told us that they probably have a famous person in the resteraunt everyday and gave us some tips about when the best times to go to the resteraunt are. Lunch is a great time to go to this steakhouse if you want to bypass the crowds, although I'm sure when were in Chicago again we'll try and go for dinner!

Just ate there last monday. We got lucky and got an 8 PM reservation, same day.
Very busy joint. Bustling with after hours business people, out of towners, people on a special dinner, and a lot of regular Chicagoans just out for a great meal.
Very friendly bar staff who seemed to know lots of the regulars. We were there with cousin on her 21st birthday and he comped our entire round of cocktails ( 6 of us in the party )

Tons of staff, everywhere you looked but they never seemed to be hovering.
Great head waiter who was very helpful in selection of our steaks.
Had the NY strip. Very tender and very flavorful.
Sides are huge. Mashed potatos and twice baked were fabulous.
Try their house wine ( which the waiter recommended. He said it was better than anything else they had to offer and I agree )

Great huge dessert cake, which was fabulous.

My only gripe was that it was crowded and the tables were sort of close together, but given the quality of the dining experience I can understand why everybody wants to eat there and this, it's crowded. What can you do?

PS: we had made the profound mistake of heading to Gene and georgetti the day before.

Worst food I've ever seen. Avoid that place and eat at Gibsons, presuming they can get you in!

this place is GREAT!!! the steaks are cooked perfectly, EVERY time. this should be a given at a steak house. here it is!!! the staff is always awesome. don't miss the deserts, especially the macadamia turtle pie WOW!!!!!! every time a go back the experience is equally GREAT!!!!!

I've made my second visit to the Gibson's Steak House in Rosemont and had the house special ribeye. The steak was done perfectly (charred on the outside, warm center). The rest of the meal was also well above average. I can recommend Gibson's highly on that score.

However, if you want a quiet romantic dinner, this is not the place for you. It is noisy and tables are packed close together. This was not a problem for the dinner party, as we were all business colleagues and wanted steak after a long day of meetings, not romance.
